Chicory is a ubiquitous roadside plant from early summer through the fall in the northeast and it's one of my favorites. The plant is a waist-high disorganized cluster of thin green stems with no substantial leaves. The delicate periwinkle blue flowers only last for a day, and stand out nicely among the stems.

I tried to grow some in my garden but it didn't take, perhaps Chicory is a free-spirit of the plant world that doesn't want to be domesticated.

It has been cultivated in Europe though, as the roots can be ground up for a coffee substitute or additive.
